YUM!

I've had a desire for baking lately. So, yesterday I was able to do a little. I put a roast, potatoes, and carrots in the oven. I made some homemade rolls. Then, I decided to make some banana bread. It is a Taste of Home recipe, and it turned out to be wonderful. It is so moist and delicious. This recipe is a keeper! So I decided to share it with you!

In a large bowl, mix together flour, sugar, baking soda, and salt.
In another bowl, combine the eggs, bananas, oil, buttermilk, and vanilla;
Add to flour mixture, stirring just until combined.
Fold in nuts.
Pour into a greased 9 by 5 in. loaf pan. Bake at 325 for 1 hour and 20 minutes or until a toothpick comes out clean. Cool on wire rack. Yield one loaf.

Best Ever Banana Bread
1 3/4 cups all purpose flour
1 1/2 cups sugar
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs
2 medium ripe bananas, mashed (1 cup)
1/2 cup vegetable oil
1/4 cup plus one tablespoon buttermilk
1 teaspoon vanilla
1 cup chopped walnuts (I used 1/2 cup pecans)

You have made me hungry, Jenny!! Thanks for the delicous recipe and I'm going to the grocery store tomorrow morning so I can make some of this yummy bread soon! Hope you have a great weekend and I sure hope Zack is feeling better soon! I know what you mean about allergy season! Alex is sick again too. We just can't seem to get him over all of this upper respitory junk!
